Making of frittata..

Need ideas to fix a quick, easy and healthy meal?
All you need is ..


Ready to eat in 30 minutes 
Preparation time: 
10-15 minutes depending on how fast is your cutting skills.
5 minutes to saute the ingredients 
15 minutes in the oven


You need:
  1. Eggs
  2. Potatoes
  3. Tomatoes
  4. Onion
  5. Mushrooms*
*changeable items: You can replace this item with fish, prawns, chicken etc.


My chopped potatoes and onions. I merely chopped the mushrooms into halves or thirds.


My healthy marinates.
I used (from LtoR) paprika, cayenne, rosemary and garlic powder. 
Kindly note paparika and rosemary are more spicy in taste.


Browned a little garlic before the potatoes, onion and mushrooms get sautéed. 


My regular guy who helped in beating the eggs.
I added a little liquid aminos to the eggs as well.


Muffins tray are useful.
I turned the oven settings to about 190'C

Pour the beaten eggs and sautéed ingredients into the muffin trays.
15 minutes later.

Homemade vitamin water..


It was a long tired day for me.

Baking class in the morning, rushed home. 
Wolfed thru my lunch.
Brought my son to swimming class.
Grocery shopping.
Preparation of dinner.
Preparation work for an upcoming review.
Tucked kids to sleep.
Blogging.

I needed something to cool down. Something that can refresh my mind as I type this post away. Something that is not sweet and will not keep me awake.

Fitness and Health..

Right after my first round of so called "dieting", I was simply jumping over the moon! Cos the total weight that I had shred was about 8kg. so I am already at the "before I had Dora" weight. So after the whole diet regime, I was just maintaining my weight for a whole 3 months. It did fluctuate up and down about 1-2 kg or so but generally all was decent. But technically I am still 8 kg away from the "before I had Isa/pre wedding days" weight and 10kg from my ideal weight. I am not sad nor disappointed in my weight gaining, guess it is all part of the motherhood package. But I guess no moms would want to be satisfied with their new weight (gain), that is.

So after this round, I am close to become greedy now. Greedy for a good reason I say. Well "WANTING" and the yearn to lose weight is still my main focus but this lead me to venture into something more:

 Fitness and Health.

You did not see it wrong. Me, (self proclaim) the laziest person in the world is pledging to everyone who reads my blog that I will look into my fitness and health. Don't mistake me that I will be some exercise guru overnight but rather I am going on a comfortable pace to build my fitness and health. One of the other reason why I am pushing myself to do this is due to the demise of my uncle that happened a couple of weeks ago. Long story cut short: Health is wealth.

Anyway, here is what I did for a start with lower impact exercise: 30 days squat challenge.




But please people, be very careful on how you can attempt this squat. It is really not as easy as what it seems.




Well of course I am not alone. I am embarking on this healthy lifestyle with a few twitter friends of mine. Not mentioning names here though so as to respect their privacy. I really want to thank them for helping me pushing my butt off the chair! (literally)

I am almost there! After about 50+days of diet (so call). This is me now.

500 calories diet

Post natal weight? I got it. 

To be honest, I gained about 10+ kg after my two kids and even after umpteen tries to shred them off, but to no avail, they still decided to be loyal to me.

So recently I decided to embark on this very important journey (with a friend who is almost finishing the diet) so that I can look my best for my cousin's wedding in January 2013. See ah xiu, you are so important to me! 

Anyway in a nutshell, in case if you do not know, I am into a special diet recently. And yes I have to craft meals of NOT more than 500 calories* everyday and if you know what is the name of the diet, please show your support by not saying the name of it till I complete my first cycle at day 21. Also please do not call me crazy or insane for attempting such a daring diet. I am definitely under close supervision and had doctor's advice so please show me your support, negative advise will be ignore. :P

Anyway here are some healthy and yummilicious meals that I had prepared so far for my 500 calories a day meals.

Just to highlight that I do not use any form of oil in my cooking. Just salt, pepper and spices at times. I will be more than happy to share my receipes and tips with you. 



100g chicken breast meat with mixed greens
168 calories


Salad with 100g tilapia and celery.
150 calories

who I am kiding right?


Stir fried 100g of ground beef with cabbage and onion
topped with one whole egg white
330 calories
a bit over my expected calories for a meal though


100g of prawns in soup with spinach with curry spice.
188 calories


Rye wrap with lettuce, cucumber, 100g of chicken breast, cottage cheese.
250 calories

I actually felt guilty eating this. :D
